Cherries On A Cloud from Cynthia B.

Sylvia is on vacation this week and thought maybe you’d like to see some recipes from the newsletter contest.  This one was from Cynthia B.

Use a 13 x 9 inch pan that has been well-buttered and floured or two 9 inch glass pie plates both well-buttered and floured as well.

7 egg whites, at room temperature

½ teaspoon cream of tartar

¼ teaspoon salt

1 ½ cups sugar

Garnish, optional

Beat egg whites and salt and cream of tartar until foamy.  Then add sugar gradually, until stiff peaks form.  Spread in prepared pan. Bake at 275 degrees F for 1 hour.  Turn off oven.  Leave in oven 8 hours or overnight.

Next day chill mixer bowl. This works best with an upright mixer so that you have your hands free to add the sugar and cream cheese.

3 cups miniature marshmallows

¾ cup granulated sugar

6 ounces of cream cheese softened (2  3-ounce packages) (take out of refrigerator about 30 minutes prior to making the filling so that it blends easily)

1 teaspoon vanilla and/or 1 teaspoon lemon juice

2 cups heavy cream

Put heavy cream into chilled bowl and start beating. Add small amounts of sugar and small pieces of cream cheese quickly while still beating. Beat mixture until stiff peak form in whipped cream.  Add in vanilla extract or lemon juice and stir in the mini marshmallows.

Spread this mixture over the meringue base.  Chill.  Let set for 2 hours or more.  Then mix 1 can of cherry pie filling with 1 teaspoon of lemon juice.

Drop cherry pie filling over top of whipped cream mixture. Garnish is optional.

Keep chilled. Serves 8-12.

Note:  This can also be made using other pie fillings such as raspberry, blueberry, peach, pineapple, strawberry and strawberry/rhubarb, etc.  Homemade pie fillings can also be made using fresh or frozen berries or fruit.

This is a family favorite of our family since 1981 when a friend passed this recipe on to me.  This is THE dessert that HAS to be brought to each and every family get-together on both sides of the family.  Sometimes I make two of them so that one can be served and then everyone will have some to take home with them besides. It is nice to know that a dessert can be so much of a family tradition and I hope that this becomes one for you as well.
