Countdown to Christmas – What Are You Going to Bake?

Last year I asked the readers of my newsletter to send me their favorite Christmas recipe. For the month of December, I’m going to feature the recipes I received. Bonnie C. sent me this recipe last year and she is eligible for a free ebook of her choice.


Bonnie’s Carrot Cake 

COMBINE:     

  •  2 cups Flour  
  • 2 teasp. baking soda
  • 1/2 teasp. salt 

Mix Together:  

  • 4 egg, beaten
  • 1 cup mazzola oil
  • 2 cups sugar
  • 3 cups of shredded carrots

 Add to the mixture above —

 Then add 1 cup of chopped walnuts.

 Turn into greased 9″ X 13″ pan and Bake 325 for 50 Min. or till done 

ICING

Blend Til Creamy:     (1 Batch is all you need for icing)

  • 8 oz. Cream Cheese
  • 1/2 Stick butter Softened
  • 4 cup Confectioner’s Sugar
  • 1 Teasp. Vanilla
  • 1/4 Teasp. Salt
  • 1 ½ tsp ground cinnamon           

NOT GOOD AS A LAYER CAKE!!

  1. Hi, Sylvia! I made a cheeseball, bacon/apricot appetizers and am doing those for another party, cranberry crunch for a brunch, chocolate wonderful for a party. I think that’s it for the party circuit this year!
